Chitarrine are egg noodles with a square section. A fanciful format with a rough surface and full-bodied consistency capable of enhancing the flavor notes of each sauce. The Chitarrine were made with "the guitar", an instrument consisting of a frame equipped with steel wires arranged a few millimeters from each other, on which the dough was pressed with a rolling pin, to obtain many square section spaghetti , of homogeneous length. They are prepared with eggs from outdoor farms and after an artisanal processing of the dough they are bronze drawn to give the characteristic rough surface.

Chitarrine are excellent when seasoned with a tomato sauce or with traditional Mediterranean ingredients and a sprinkling of grated Parmesan cheese.
