Garganelli are a type of egg pasta typical of Romagna, tubular in shape with a characteristic perpendicular groove. They are obtained by rolling a small lozenge of pastry around a stick that is scratched by pressing it on a weaving comb or on a wooden rigagnocchi.

The appearance is similar to penne, except that the garganello has a different consistency at the point where the two edges of pasta overlap.
